West, Texas! How many times do I have to explain this? One more time, West, Texas is the name of a town located between Hillsboro and Waco. Want to know more about the town of West, TX?

It's 6:00 in the morning and we're ready to go. We set out on the road headed up Interstate 45 North towards Dallas, Texas on a really nice day. That's right, who would have guessed it! Finally good weather for a BBQ weekend. We turned off of Interstate 45 and headed West with a navigator and  a map of "The Back Roads of Texas". We made our way to the town of West, Texas. Real nice country with rolling hills, lot's of farm land, plenty of cattle, and colorful horse ranches. The kind of Texas you read about in story books.

Upon arrival, we were greeted at the sign in gate and given instructions to the location of our cook spot. The back of our spot was next to the Rodeo Arena and the front of our spot looked out over a beautiful valley. We only took the essentials therefore the set up was real easy and quick. Don, Linn, & Darrell made the journey. We had some pretty good neighbors, BCB Cookers (Russell, Cecilia, & Jo Coleman from Clute. Ron was recovering from a dog bite to his hand and Vince had another commitment. 

With such a large cook, 135 teams, we knew it was going to be a long and tedious competition. Well, we were flat wrong. This was without a doubt one of the best and well run competitions we ever had the pleasure to attend. Let me tell you right now, these folks had it together. We picked up our turn in trays on Friday afternoon, had a cooks meeting on Saturday morning, with turn in times at 2 hour intervals. This was the first time we ever had to turn in 12 slices of brisket and 12 ribs but with 135 teams, that's a whole lot of judging! When it was all said and done, we were back on the road headed for Houston about 6:45 Saturday evening. Our hats off to The West Volunteer Fire Department, Laura Blount, and Lynn Shivers with the IBCA.

How'd we do? Without a doubt, the best brisket we've ever cooked (Thanks CB!), a little too salty on the ribs, and our chicken made the semi-finals. With 135 teams and some of the best cookers in Texas, we did good!

Well that's the story.

Our next competition will be near the Golden Triangle in Hardin County in a small little oil town called Sour Lake. We'll keep on keeping on!
